Gingerbread Cookies

Gingerbread cookies are a classic holiday treat with sweetness, spice and everything nice. We added both dry and fresh ginger for extra flavor. Cut and decorate in your favorite shape!


For the Dough:
3 cups (360 grams) All Purpose Flour
1/4 tsp (1 gram) Baking Powder
1/2 tsp (2.5 grams) Baking Soda
1/4 tsp (.75 grams) Kosher Salt
2 Tbsp (13.2 grams) Cinnamon, ground
2 Tbsp (11 grams) Ginger, ground
1/2 tsp (1.1 grams) Clove, ground
1/2 tsp (.75 grams) Nutmeg, ground
1 each Ginger, 1″ piece
1/2 cup (114 grams) Unsalted Butter, softened
1/2 cup (.98 grams) Dark Brown Sugar
1/2 cup (120 mL) Molasses
1 tsp (5 mL) Vanilla Extract
1 each Large Eggs

For the Icing:
1.5 oz (37 grams) Pasteurized Egg Whites, or regular egg whites if using right away
2 cups (224 grams) Powdered Sugar
1 tsp (5 mL) Vanilla Extract
