Za'atar Roasted Carrots & Kale Salad with Cumin Spiced Yogurt

In this recipe, bunch carrots are caramelized in the pan and then topped with a salad of thinly sliced kale tossed in a chili and garlic vinaigrette. A dollop of yogurt spiced with cumin and lemon juice is served on the side. Top it all over with chopped roasted cashews. This makes a great side dish for any meal or is hearty enough on its own.

Ingredients:
