Yeasted Blini

These tender, yeasted griddle cakes are incredibly versatile. Eat them with maple syrup at breakfast, for lunch or dinner wrapped around smoked salmon, or as dessert with poached fruit. But at Kachka restaurant in Portland, OR, they’re almost always made silver-dollar size and topped with caviar.
