This toasted bread is a blank canvas and once topped with pesto, tomato sauce or whatever inspires you, makes the perfect canapé for cocktail parties. Ingredients: For the Bruschetta: 2 slices Sourdough Bread 2 Tbsp (24 mL) Extra Virgin Olive Oil Kosher Salt (as needed) For the Topping: 1 White Peach 5 Mixed Heirloom Cherry Tomatoes 2 Basil Leaves ½ tsp (1 gram) Lemon Zest 2 tsp (8 mL) Extra Virgin Olive Oil 2 tsp (6 mL) Balsamic Vinegar Kosher Salt (as needed) Black Pepper, freshly cracked (as needed) 1 Garlic Clove For the Topping: 4 Tbsp.
