Ingredients For the Salmon: 2 Atlantic Salmon Filets, scales and pin bones removed 2 Tbsp (24mL) Canola Oil Kosher Salt (as needed) Black Pepper (as needed) 1 Garlic Clove 1 Sprig Thyme For the Sauce: 2 Tbsp (28 grams) Unsalted Butter 1 Tbsp (20 grams) Toasted Pumpkin Seeds 1 Tbsp (13 mL) Lemon Juice ½ Apple ¼ Head of Frisée Fleur de Sel (as needed)
